I missed joining in last year and am so glad that I am able to do so this year. It is good fun and it is fantastic looking at others delicious recipes and getting great ideas for things to try....I do love ginger so whats not to enjoy something in this recipe....hopefully you will give it a go and enjoy.
Sticky Toffee Pudding with Ginger
3oz of soft butter
2 large eggs
1 teaspoon baking powder
5 pieces of stem ginger in syrup drained and finely chopped
5 and half oz of light muscavado sugar
6 oz self raising flour
Cream butter and sugar. Add eggs then flour and baking powder into mixture, mix well until smooth. Stir in the stemmed ginger and 6 floz of hot water, pour the mixture into a well greased cake tin. Bake for 45 - 50 mins at 180c
Toffee Sauce
6 tablespoons of double cream
6 oz light muscavado sugar
4 and half oz butter
Place butter and sugar in small pan, heat gently until the butter is melted and the sugar is dissolved, stir in cream and beat gently to warm through, spoon sauce over sponge.
